Nor had I heard of that until I found him in a Brunch menu in Mexico (more than a year ago). What is this mysterious «Shakshuka»? I knew I was going to like it because it has tomatoes and eggs (a great combo).

Shakshuka (also spelling Shakshouka or Chakchouka) is a large pan of climbed eggs in a tomato sauce, peppers, onions, garlic and olive oil. It can be seasoned with cumin, paprika and pepper of Cayena. The recipe has existed in Mediterranean cultures for ages.

Since I found him in Mexico, I was quite confused to see that he was Mediterranean. But, if you think about it for a second: Mexican food has tomatoes, peppers, eggs, cumin … makes sense to migrate to Mexico.

In any case, I fell in love and I was delighted to find recipes that confirmed my suspicion that Shakshuka is healthy. YEAH!

I added feta cheese to this Shakshuka but it is not necessary. If you leave it, you will hardly have points for the members of the Blue or Purple WW program. The only thing that counts in the recipe is the tablespoon of olive oil.

I added the feta cheese because I think it makes it tastier. In addition, my children will eat anything with cheese. It is still a healthy shakshuka with feta cheese, since I don’t use too much.

How do you do it? First, you make a thick tomato sauce. Then some eggs floats at the top and send the pan to a preheated oven. The oven cooks the eggs and then you eat it with a good bread (or not).

You can eat this healthy shakshuka for breakfast, lunch or dinner. I like to make an extra and eat it all week. It is delicious heated in the microwave, but does not freeze well.

You could freeze the part of the sauce before putting the feta cheese and eggs.

Ingredients

1 tablespoon of extra virgin olive oil
1 large, peeled onion and fine slices
1 large red pepper, sown and fine slices
3 garlic cloves, peeled and fine slices
1 teaspoon of ground cumin
1 teaspoon of paprika
1/8 teaspoon of cayenne
1 (28 ounces) can whole plum tomatoes with juices, thick chopped
1/4 teaspoon of ground black pepper
5 ounces of feta cheese, crumbled
6 eggs
coriander or chopped parsley to serve (optional)

Instructions

Hot the oven at 375 F. Hot a large medium oven proof pan and add oil, onion and pepper. Save until it softens but does not brown about 15 minutes. Add the garlic and jump for a minute. Add the cumin, paprika and cayenne. He roasted the spices for a minute. Add the tomatoes and the black pepper and cook for approximately five minutes to the medium high to reduce the tomatoes a bit. Mix the feta cheese and have a flavor for the taste (the dish may need more salt depending on your canned tomatoes). Add salt, cumin, more cayenne, whatever you have better for you.

Break the eggs one by one adding them on top of the sauce. Place the pan in the oven and handle the shakshuka until the eggs are your desired donode, approximately 7 minutes for liquid eggs, 11 minutes for more solid yolks.

Serve with coriander or parsley.
