The Mexican zucchini boats are for those who love the burritos but not the Burritos belly. You know what I’m talking about!
The burrito sits on your belly and you will moan: «How did I ate everything?»
These ships are like burritos without groans. You use zucchini, which is an excellent replacement for foods such as pasta, look at the pasta and zucchini recipe and baked zucchini lasagna.

I know it’s not zucchini season, but it’s still there in the supermarket waiting for you. As a pumpkin throughout the year and zucchini is one of my favorites.
I make an entire platelet plate of these and then I can eat two for lunch when I want a burrito. The only problem to store them is that sometimes someone eats them when I’m not looking. You know who you are.
This is also a good side vegetable for other healthy foods. I served this with a grilled fish that my children quickly rejected. I have cooked so many meals since March that my children cannot stand, oh good. There are only so many days that you can eat hamburgers and macaroni with cheese.

Ingredients
4 Large zucchini
1 tablespoon of olive oil
1 red pepper, with nucleus and chopped
½ red onion, chopped
1 cup of frozen corn, defrosted
1 Jalapeño, sown and cut into cubes
1-15 ounces can black, drained and rinsed beans
1 cup of fresh sauce
2 cumin teaspoons
1 teaspoon of Chile powder
2 ounces of grated cheddar cheese
Instructions
Preheat the oven to 400 F. Sprinkle a 9×13 «saucepan with antiadherer spray. Cut the zucchini in half and place it the center of each zucchini with a teaspoon or melon balls. Hot the olive oil in a large pan. Add pepper and onion and jump until the onion is ablonged (approximately 4 minutes). Add corn. Jalapeño, beans, sauce, cumin and dust of Chile.
Place the zucchin and fill with the bean mixture. Sprinkle each half with cheese and cover the saucepan with aluminum foil. Bake for 20 minutes. Cover with coriander (optional).
These do not freeze well.
