Ingredients You Need for Skillet Chicken and Vegetable Sausages

  • Sweet potato
  • 4-Link Chicken Sausage: I use ALDI Apple Chicken Sausage. You can also exchange in kielbasa.
  • Broccoli
  • Bell pepper: Choose a sweet type (look for red, yellow or orange), not green pepper which is more bitter.
  • Maple syrup: Use pure maple syrup, which only has one ingredient (maple syrup)
  • Olive oil
  • Mustard: You can use Dijon or stone ground.
  • Garlic
  • Thyme: I use dried thyme.
  • Salt: I use kosher salt

How to Make Skillet Chicken and Vegetable Sausages

  1. Chop potatoes, sausages, broccoli, and peppers – everything should be bite-sized so it cooks evenly (and can be eaten without a knife!).
  2. Prepare the sauce: Mix all the sauce ingredients and set aside.
  3. Bake the potatoes first: this gives them a head start in the cooking process. After 15 minutes, add everything else, drizzle or brush with sauce and continue baking.
  4. Drizzle over the rest of the sauce, pour into bowls and enjoy.

Tips for preparing this meal

  • Use a baking sheet that is large enough. I recommend a half sheet pan, which measures approximately 18″ x 13″.
  • If you want to make a larger portion, use a second baking sheet. Crowding things on a sheet can cause uneven baking.
  • Feel free to mix everything together on the baking sheet or keep them separate as shown below (tip: picky eaters might appreciate keeping things separate!).

  • Use your favorite type of sausage or kielbasa.
  • Make the sauce with honey instead of maple syrup.
  • Switch out vegetables your family likes best, like white potatoes instead of sweet potatoes, fresh green beans instead of peppers, or halved Brussels sprouts instead of broccoli.

Can I make this vegetarian?

Absolutely. Just use plant-based sausages.

Ingredients

  • 2 cups diced sweet potato

  • 4 links chicken sausage

  • 2 cups broccoli florets

  • 1 bell pepper, cut into small pieces

  • 2 tablespoons pure maple syrup

  • 1 tablespoon + 3 teaspoons olive oil

  • 1 tablespoon mustard (Dijon or stone ground)

  • 2 cloves garlic, minced or pressed

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray and set aside.
  2. Cut the sweet potato, broccoli and peppers into small pieces.
  3. In a medium bowl, toss sweet potato with 1 teaspoon olive oil and place on baking sheet. Bake for 15 minutes.
  4. While the sweet potato is baking, whisk together the sauce ingredients in a small dish: maple syrup, 1 tablespoon olive oil, mustard, garlic, thyme, and salt.
  5. In the same bowl you added the potatoes, toss the sausage, broccoli, and pepper with 2 teaspoons of olive oil. Place on a baking sheet with the potatoes, spread with half the sauce and bake for 15 more minutes.
  6. Remove from the oven, spread with the remaining sauce and serve.

Grades

Feel free to substitute kielbasa for the chicken sausage.
